Delightful vegan financiers with a tender crumb and rich flavor, perfect for a quick snack or dessert.

Ingredients

oil and applesauce

  • ¼ cup neutral oil (canola, sunflower, vegetable)
  • ¼ cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 6 tbsp oat milk
  • 1 tsp vanilla extract
  • 1 cup + 2 tbsp almond flour
  • 2 tbsp potato starch
  • ¼ cup white rice flour (NOT glutinous rice flour)
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 24-well mini muffin pan and dust with rice flour.
  • Whisk oil and applesauce until emulsified. Add sugar and whisk until dissolved. Mix in oat milk and vanilla.
  • Add almond flour, potato starch, rice flour, salt, baking powder, and baking soda. Stir until smooth.
  • Let batter sit for 3-5 minutes. Fill muffin wells ¾ full. Add fruit if desired.
  • Bake for 11-12 minutes until edges are golden. Cool in pan for 10 minutes, then remove and cool completely.

Use fresh fruit toppings for added flavor and presentation.
