Delight in these zesty tartlets featuring fresh Corsican clementines and a buttery almond crust, perfect for a refreshing dessert.

Instructions
Prepare the crust by mixing flours, erythritol, egg, melted butter, and a pinch of salt. Press into tartlet molds and bake at 180°C for 15 minutes.
While crust cools, juice the 8 clementines and set aside.
In a saucepan, combine clementine juice, erythritol, agar agar, and eggs. Cook over low heat, stirring until thickened.
Pour the curd into the cooled tart shells and refrigerate until set, about 2 hours.
Decorate with thin slices of clementine and serve chilled.
Notes
Use fresh clementines for the best flavor and vibrant color.
