Delight in these zesty tartlets featuring fresh Corsican clementines and a buttery almond crust, perfect for a refreshing dessert.

Ingredients

Crust

  • 100 g Farine T110 (semi complète)
  • 100 g Farine d'amande (blanchie ou poudre d'amande très fine)
  • 60 g Erythritol
  • 1 unit oeuf
  • 90 g beurre
  • 1 pinch Sel

Clémentine Curd

  • 3 unit oeuf
  • 8 unit Clémentines corses
  • 1 g Agar Agar
  • 60 g Erythritol

Instructions 

  • Prepare the crust by mixing flours, erythritol, egg, melted butter, and a pinch of salt. Press into tartlet molds and bake at 180°C for 15 minutes.
  • While crust cools, juice the 8 clementines and set aside.
  • In a saucepan, combine clementine juice, erythritol, agar agar, and eggs. Cook over low heat, stirring until thickened.
  • Pour the curd into the cooled tart shells and refrigerate until set, about 2 hours.
  • Decorate with thin slices of clementine and serve chilled.

Notes

Use fresh clementines for the best flavor and vibrant color.
