Instructions
Preheat oven to 375°F (190°C). Grease madeleine pan with 1 tablespoon melted butter and 1 ½ teaspoons flour.
Melt remaining 10 tablespoons of butter; set aside to cool.
Whisk eggs, sugars, vanilla, and salt until combined. Gently fold in sifted flour and cooled melted butter, then add zest if using.
Drop heaping tablespoonfuls of batter into prepared pan. Bake for 9 minutes until golden and springy.
Cool on a rack. Optional: dust with powdered sugar or dip in chocolate before serving.
Notes
Ensure not to over-mix the batter to keep madeleines light and tender.
