Ingredients

butter

  • 1 Tablespoon unsalted butter
  • 10 Tablespoons unsalted butter (cut into pieces)

flour

  • 1 ½ teaspoons all-purpose flour
  • 1 ¼ cup all-purpose flour
  • 2 large eggs (room temperature)
  • ½ cup granulated sugar
  • 3 Tablespoons light brown sugar (firmly packed)
  • 2 teaspoons vanilla extract
  • teaspoon salt
  • 2 teaspoons lemon or orange zest (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease madeleine pan with 1 tablespoon melted butter and 1 ½ teaspoons flour.
  • Melt remaining 10 tablespoons of butter; set aside to cool.
  • Whisk eggs, sugars, vanilla, and salt until combined. Gently fold in sifted flour and cooled melted butter, then add zest if using.
  • Drop heaping tablespoonfuls of batter into prepared pan. Bake for 9 minutes until golden and springy.
  • Cool on a rack. Optional: dust with powdered sugar or dip in chocolate before serving.

Notes

Ensure not to over-mix the batter to keep madeleines light and tender.
