A delicious high-protein birthday cake that's easy to make and topped with colorful sprinkles and frosting for a festive touch.

Ingredients

Dry Ingredients

  • 2 cups Rolled Oats (Processed into oat flour)
  • 8 tablespoons Coconut Flour
  • ¼ cup Sweetener
  • ½ teaspoon Salt
  • 3 teaspoons Baking Powder
  • 3 scoops Protein Powder (Vanilla)
  • 3 large Egg Whites (or 138g Liquid Egg Whites)
  • 1 ½ tablespoons Coconut Oil
  • 1 tablespoon Honey

Wet Ingredients

  • 1 container Greek Yogurt (5.3 Ounces Fat Free Plain)
  • 4 ounces Milk Substitute (or milk)
  • 1 teaspoon Vanilla Extract
  • 1 container Greek Yogurt (5.3 Ounces Fat Free Vanilla)
  • ½ teaspoon Vanilla Extract
  • 1 scoop Protein Powder (Vanilla)
  • 1 teaspoon Sweetener

Add-ins & Toppings

  • 2-4 teaspoons Sprinkles (Rainbow)
  • 4 ounces Chocolate Chips (Sugar Free)
  • 4 ounces Cream Cheese (Fat Free)

Instructions 

  • Process oats into flour, then mix dry ingredients in a bowl.
  • Combine wet ingredients in another bowl, then mix with dry ingredients.
  • Pour batter into a prepared pan, top with sprinkles, and bake at 350°F (176°C) for 20-25 minutes.
  • Mix frosting ingredients together, then spread over cooled cake and add sprinkles.
