Ingredients

Eggs

  • 4 large eggs

Nut Butters

  • ½ cup cashew butter
  • ½ cup roasted almond butter (smooth)

Sweeteners

  • ½ cup orange blossom honey

Spices

  • 1 ½ teaspoons ground cinnamon
  • 1 ½ teaspoons ground ginger
  • ½ inch fresh ginger, peeled and grated
  • 1 teaspoon ground cloves
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon ground aniseed
  • ¼ teaspoon ground black or white pepper

Orange Zest

  • 1 medium orange (zest of 1 medium orange)

Leavening Agents

  • ½ teaspoon baking soda

Instructions 

  • Preheat oven to 350°F and prepare two 6-inch loaf pans.
  • Whisk eggs, cashew butter, and almond butter until smooth. Stir in honey, spices, orange zest, and baking soda.
  • Pour batter into pans, place on a baking sheet, and bake for 30-35 minutes until golden and a tester comes out clean.
  • Transfer loaves to a rack and cool to room temperature before serving.
