A delicious French apple and prune cake with a moist texture and fruity flavor, perfect for dessert or tea time.

Ingredients

Dried Fruits & Nuts

  • 1 pinch salt (or fine salt)
  • 3 pieces eggs
  • 2 pieces egg yolks
  • 45 g butter
  • 6 tablespoons milk
  • 1 sachet vanilla sugar
  • 150 g sugar (powdered or semoule)
  • 3 pieces apples
  • 200 g flour
  • ½ sachet baking powder (levure chimique)
  • 20 pruneaux prunes
  • 1 piece egg
  • 100 g sugar
  • 80 g butter

Instructions 

  • Steep the pruneaux in lemon tea, then drain.
  • Beat eggs, yolks, sugar, milk, and melted butter until smooth. Add flour, baking powder, and salt; mix well.
  • Dice 2 apples and slice the other; fold into batter with pruneaux. Pour into greased pan and arrange apple slices on top. Bake at 180°C for 50 minutes.
  • Prepare the cream by melting butter, then stirring in sugar and egg. After 20 minutes of baking, pour over the cake and bake for an additional 30 minutes.
  • Let cool briefly before demolding and serving.

Notes

Use fresh apples for best flavor and texture.
