Instructions
Refrigerate egg whites for 24 hours, then bring to room temperature.
Beat egg whites with cream of tartar and extract until soft peaks form. Gradually add sugar and beat until stiff, glossy peaks form. Fold in food coloring if using.
Sift almond flour and confectioners' sugar, then gently fold into the meringue in three additions. Continue until batter flows like honey and passes the figure 8 test.
Pipe batter onto baking sheets, tap to remove air bubbles, and let sit until dry and no longer tacky (~30-60 mins).
Preheat oven to 325°F (163°C). Bake macarons for 13 minutes, then cool on sheets for 15 minutes before transferring to racks.
Fill cooled shells with desired filling, then sandwich together. Refrigerate 12-24 hours before serving for best flavor.
Notes
Allow macarons to mature in the refrigerator for optimal flavor and texture.
