Delightful, delicate French macarons with crisp shells and chewy interiors, perfect for any occasion.

Ingredients

Dry Ingredients

  • 3 large egg whites (usually between 3–4 large egg whites)
  • 1 g cream of tartar
  • 0.5 tsp extract (vanilla, almond, coconut, etc.) (optional)
  • 80 g superfine sugar (aka caster sugar)
  • 1-2 drops gel food coloring (optional)
  • 125 g almond flour
  • 125 g confectioners' sugar
  • desired amount macaron filling (see notes for options)

Instructions 

  • Refrigerate egg whites for 24 hours, then bring to room temperature.
  • Beat egg whites with cream of tartar and extract until soft peaks form. Gradually add sugar and beat until stiff, glossy peaks form. Fold in food coloring if using.
  • Sift almond flour and confectioners' sugar, then gently fold into the meringue in three additions. Continue until batter flows like honey and passes the figure 8 test.
  • Pipe batter onto baking sheets, tap to remove air bubbles, and let sit until dry and no longer tacky (~30-60 mins).
  • Preheat oven to 325°F (163°C). Bake macarons for 13 minutes, then cool on sheets for 15 minutes before transferring to racks.
  • Fill cooled shells with desired filling, then sandwich together. Refrigerate 12-24 hours before serving for best flavor.

Notes

Allow macarons to mature in the refrigerator for optimal flavor and texture.
