Delightful small almond or nut-flavored cakes with a rich brown butter aroma, perfect for a quick elegant treat.

Ingredients

Brown butter

  • 150 g Unsalted butter (to make the brown butter)

Egg whites

  • 150 g Egg whites (approx. whites of 5 eggs)

Dry ingredients

  • 100 g Icing sugar
  • 75 g All-purpose flour ((25g into each nut version))
  • 75 g Nut flour (can be almond, hazelnut, or pistachio)
  • 1 pinch Salt (large pinch)

Instructions 

  • Heat butter in a saucepan until golden brown and nutty, then cool.
  • Whisk egg whites until foamy, then add powdered sugar.
  • Fold in brown butter, then divide batter into 3 portions for different flavors.
  • Mix each portion with respective flour, nut flour, and salt; pipe into molds and rest in fridge for 1 hour.
  • Preheat oven, fill molds with batter, top with chopped nuts, and bake at 175°C for 20 minutes.
  • Let cool briefly, then serve fresh; store leftovers in an airtight container at room temperature.

Notes

Use high-quality nut flour for best flavor and texture.
