Instructions
Preheat oven to 300°F (150°C). Sift almond flour and powdered sugar twice; set aside.
Whip egg whites with cream of tartar and salt until soft peaks form. Add food coloring if desired, then whip until stiff, glossy peaks form.
Gently fold sifted dry ingredients into the meringue until batter flows in a thick ribbon. Pipe 1.5-inch rounds onto prepared sheets. Rest for 30-60 minutes until a dry skin forms.
Bake one tray at a time for 15-18 minutes until shells are firm and peel easily. Cool before filling.
Prepare custard by whisking egg yolks and sugar, then cooking with milk until thickened. Cool completely, then beat in softened butter and vanilla to make buttercream. Pipe onto shells and sandwich together. Refrigerate for 24 hours before serving.
