Ingredients

Dough

  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 4 teaspoons active dry yeast
  • 2 1/4 teaspoons kosher salt
  • 1 1/4 cups unsalted butter (cold)
  • 1 cup milk (cold)
  • 1 large egg (beaten with water) (for egg wash)

Instructions 

  • Mix flour, sugar, yeast, and salt. Add cold butter, then milk; knead into a stiff dough.
  • Wrap dough, chill for 1 hour. Roll into a rectangle, fold into thirds, and chill again.
  • Divide dough, roll into rectangles, cut into triangles, notch, and roll up from wide end.
  • Place croissants on a lined sheet, proof until doubled, then brush with egg wash.
  • Bake at 375°F (190°C) for 15-20 minutes until golden and flaky.

Notes
