Ingredients
Dry ingredients
120gflour(¾ cup + 1 tbsp)
1tspbaking powder
15gcocoa powder(unsweetened, 2 tbsp)
Dairy and fats
100gbutter(cubed and softened to room temperature, 7 tbsp)
45gpowdered sugar(⅓ cup)
½tspsalt
Chocolate
40gdark chocolate(chopped into small pieces, ¼ cup)
Instructions
Mix flour, baking powder, and cocoa powder. Cream butter, sugar, and salt until smooth. Sift dry ingredients into the mixture and fold in chocolate pieces.
Form dough into a log, wrap in plastic, and freeze for 20 minutes.
Slice the chilled dough into 5mm pieces, reshape as needed, and place on a parchment-lined tray. Freeze for 10 minutes.
Preheat oven to 160°C (320°F). Bake slices for 15 minutes, then cool on a rack for 10 minutes.
