Ingredients

1cupunsalted butter, softened(226g)
1cupconfectioners’ sugar(120g)
1.5Tbspfresh orange zest(about 1 large orange)
1largeegg(at room temperature)
1largeegg yolk(at room temperature)
1.5tsppure vanilla extract
0.25tspsalt
2cupsall-purpose flour(250g, spooned & leveled)
optionalcoarse sparkling sugar(for topping)
0.67cupheavy cream(160g/ml)
6ozsemi-sweet chocolate, finely chopped(170g)
Instructions
Prepare ganache: Heat cream until simmer, pour over chopped chocolate, and stir until smooth. Cool for 45 minutes to thicken.
Make cookie dough: Beat butter, sugar, and orange zest until combined. Add egg, yolk, vanilla, and salt; mix well. Incorporate flour until dough forms.
Roll out dough to 1/4-inch thickness on floured surface. Chill for at least 3 hours.
Cut out cookies with a 1.5-inch round cutter, place on baking sheets, sprinkle with sugar if desired, and bake at 350°F (177°C) for 9-11 minutes. Cool completely.
Pipe ganache onto flat side of half the cookies, top with remaining cookies, and gently press to spread ganache to edges. Store in an airtight container.

Chill the ganache thoroughly for best spreading consistency and store cookies in an airtight container for up to 3 days at room temperature or 1 week refrigerated.
