A no-bake cheesecake combining the zesty flavor of lime with crunchy spéculoos cookies for a delightful treat.

Ingredients

Crust

  • 150 g spéculoos
  • 75 g beurre (melted)

Filling

  • 80 g sucre en poudre
  • 1 unit zeste de citron vert
  • 30 g jus de citron vert
  • 300 g philadelphia

Cream

  • 20 cl crème liquide entière

Instructions 

  • Mixer spéculoos with melted butter and press into individual molds.
  • Mix Philadelphia, lime juice, zest, and sugar until smooth.
  • Whip the cream and fold into the filling.
  • Pour filling into molds and refrigerate for 4 hours.
  • Démouler and serve chilled.

Notes

Ensure the cheesecake is well chilled before serving for best texture.
